
Watermelon Protein Smoothie
Watermelon is by far one of my favourite fruits. It’s refreshing and reminds me of summer. It’s also very hydrating and with a couple additional ingredients, it can be elevated to a protein-packed smoothie. Instead of using ice, you can cube four cups of watermelon, about the size of ice cubes or bigger and freeze them for the smoothie. At least four hours in the freezer will do. the addition of Greek yogurt adds protein and a nice creaminess to this smoothie. When building your smoothie in the blender, add your liquid ingredients first to prevent the blades from jamming.
Additionally, garnishing your glass might seem like an unnecessary and even frivolous step; however, it’s a staple in any restaurant or cocktail bar for a reason. What you see and smell before you sip enhances the experience. Your olfactory senses taking in the fresh watermelon and mint garnish will make an already great smoothie taste even better.
Ingredients
- 4 cups of watermelon (cubed seedless watermelon, frozen for at least 4 hours in advance if you want your smoothie to be extra cold and not diluted with the water from ice cubes)
- 1/2 cup cold water
- 100g or one personal sized yogurt cup of plain Greek yogurt
- 1/2 fresh lime (juiced, about 1 tbsp)
- 1 tbsp liquid sweetener (honey or agave nectar, optional depending personal taste)
- Pinch of salt (heightens the natural sugar profiles)
- A couple small wedges of watermelon for garnish
- 2-4 fresh mint leaves for garnish
Instructions
1. Add the water, lime juice, liquid sweetener and yogurt into a blender first.
2. Add the Watermelon: Layer the watermelon cubes on top of the liquid base, then sprinkle in a pinch of salt.
3. Blend until completely smooth
4. Garnish & Serve: Pour immediately into chilled glasses. Garnish with a small watermelon wedge on the rim. Then insert the sprig of mint into the watermelon wedge.
